matcha macapuno muffins.
the ones sprinkled with shaved belgian dark chocolate don’t have apples. i added fresh apples to the ones that have macapuno strips on top.
personally, i like the non-appled ones since i feel like you can really taste the macapuno creaminess. i substituted a lot of the milk with coconut milk and coconut cream, to really bring out the coconut flavor. i think the apple, though adds nice texture, kind of overwhelms and kills the macapuno taste. oh well.
(macapuno is a mutant coconut that has a fleshier inside. denser, but soft flesh.)
in general, the muffins came out light, creamy and fluffy with the strings bringing out the macapuno taste. the matcha cuts the sweetness and adds complexity with a bit bitterness— plus it’s a fun color.
